Buddha Bowl

All Ingredients are Organic

1 1/2 cups of brown rice

1 can of chickpeas

1/2 avocado

1/2 cup of shredded cabbage

1/2 cup of cauliflower

1/2 cup of broccoli

1/2 red pepper

1/2 yellow pepper

1/2 orange pepper

1 small onion

Boil 1 1/2 cups of brown rice with water, dash or olive oil and salt. after bringing to bowl, cook for 30 min

In a small wok pan sauté all veggies together in olive oil and salt and pepper

start with onion first then add the other veggies

add a dash of soy sauce

cook until tender

in a separate pan cook the chickpeas with olive oil on medium high heat or until slightly browned and tender

Put all ingredients in a bowl. This serves 2 and is good for sharing. let it sit and serve at room temperature

Garnish with avocado

This bowl is sooo tasty and takes 25 min or under to make!
